Toasted Vegan Cheese & Mushroom Melts With Caramelised Onions And Jam Recipe

INGREDIENTS 8 slices of sourdough or gluten-free bread, buttered with vegan buttery spread or brushed with olive oil 1 portion of Balsamic Caramelised Onions 1 portion of Sautéed Mushrooms Around 180 ml (2/3 cup) Vegan Cheese Around 4 tbsp of berry jam (1 tbsp per sandwich)

DIRECTIONS Toast the buttered bread slices in a pan. Spread the bottom slices with berry jam and top each bottom slice with 1/4 of the mushrooms, 1/4 of the onions and around 3 tablespoons of the Melty Vegan Cheese. Place the top slice of toasted bread onto each sandwich and serve immediately

Tofu Tikka Masala Recipe

Spiced just right and bursting with flavor, plus this comes together in around 30ish minutes! What more could ya want from a meal?
DO IT: . CURRY PASTE 1 medium yellow onion, quartered 1 shallot, halved 5 large cloves fresh garlic 2- 1inch pieces of fresh ginger 2 tbsp garam masala 2 tsp ground turmeric 2 tsp salt 1 tsp crushed red pepper 1 lemon zest & juice.

TOFU 1 tbsp coconut oil 2 cups sliced cremini mushrooms 1-15ox can of full fat coconut milk or cream 20 oz extra firm tofu, cubed (from two bricks) 1-6oz can tomato paste 1/2 cup vegan plain Greek yogurt 1/4 cup chopped basil, cilantro or green onion 3 cups cooked rice.


NOTES: To make the curry paste combine the onion, shallot, garlic, ginger, Garam masala, turmeric, salt, red pepper, lemon zest and juice in a blender. Blend until thick paste forms. To make the tofu & shrooms, in a large wide brim skillet, heat coconut oil over medium-high, once hot, add in the mushrooms.

Cook for 3 mins, toss & cook another 3 mins. Next add in 1/4-1/2 cup curry paste, (more if you want stronger flavor), coconut milk, tomato paste & mix well to combine. Then add in the tofu, bring to a boil, cover & lower to a simmer. Let cook for 15-20 minutes, stirring occasionally.

Then remove from the heat and stir in the yogurt. Taste and adjust any seasoning or add more curry paste if desired. Top with basil, cilantro or green onion. Serve with cooked rice & mixed greens on the side of desired.

They’re so easy to make and so good!

INGREDIENTS for these Tricolor Banana Pancakes 1 large ripe banana, 1/2 cup spelt flour 1/2 cup almond flour Pinch of salt 1 tbsp apple cider vinegar 1 cup oat milk 1 tsp baking powder 2 tbsp maple syrup (optional) 1 tsp oil (for brushing a skillet) maple syrup, Plant based yogurt, banana slices or berries, to serve Beetroot juice Cacao powder Hempseed protein powder for the colors .

INSTRUCTION: Mix all ingredients together until it is a smooth dough (maybe you should add some flour or milk). Divide the dough into 3 and color it with the beetroot juice, hempseed protein powder and cacao powder. Heat the oil in a pan and add 1-2 tbsp dough. Bake the dough on both sides until it’s light brown. Top with your favorite toppings and enjoy! Hope y’all have an amazing weekend!

Cupboard Chickpea Curry Vegan Recipe

Super easy, tasty, cheap and made totally from your store cupboard! Give this a save and try it out

Makes 4 portions — ▪️2 tbsp oil ▪️3 garlic cloves (or jarred/powder) ▪️1 red onion (skip if don’t have) ▪️1 tsp paprika ▪️1/2 tsp cayenne pepper ▪️1/2 tsp ground coriander ▪️Pinch of chilli flakes ▪️2 tbsp tomato puree ▪️2x 400g cans chickpeas ▪️200 ml veg stock ▪️1 can coconut milk ▪️1/2 cup ground almonds 60g — Heat a large pot on a medium heat with oil, crushed garlic + red onion and cook down for a minute Add all the spices and tomato puree and stir Finally add the drained chickpeas, coconut milk, veg stock, ground almonds and cook on a high heat for 7-8 minutes until it thickens (making sure to stir) And that’s it!

Carrot Sesame Fries With A Creamy Yogurt Tahin Dip Recipe

Here is the RECIPE: • 2 tbsp soy yogurt ( or other) •1 tsp tahini ( Sesame paste) • 1 tsp agave or rice syrup (optional) • 1 tbsp garden herbs (frozen, chopped) or fresh herbs • salt and pepper • optional: a dash of fresh lemon juice optional: 1/2  locust bean flour ( makes it thicker).

Mix all ingredients to a cream dip. Season with salt and pepper and serve with bread, fries, potatoes and more!

Idli Coconut Chutney Cucumber Version Recipe

Ingredients: For the chutney 1 cup fresh grated coconut 1/4 cup chopped cucumber 1 tsp grated ginger 1 green chilli chopped (optional) Water as needed Salt to taste.

For the tadka / tempering 1 tbsp oil 1/4 tsp mustard seeds 8-10 curry leaves A pinch of aesofoetida Chopped green chilli (optional) Methods Blend together the chutney ingredients along with some water till it all comes together. (Add water as per desirable consistency) Take the chutney out in a bowl. In a small pan heat the oil. Add the mustard seeds and let them sputter. Add the curry leaves and chopped green chillies. Turn off the flame and add the aesofoetida. Pour this over the chutney. .

Indian Style Coconut Cauliflower With Rice Recipe

Ingredients: 1 tbsp olive oil 1 yellow onion, diced3 cloves garlic, minced 1 tbsp fresh ginger, minced 2 tbsp yellow curry powder 1 tsp cinnamon⠀⠀⠀ 1 tsp cumin 1 (14oz) can diced tomatoes 3 (14oz) cans coconut milk⠀⠀⠀ 1 large head of cauliflower, cut into large florets ,cilantro (optional)⠀⠀⠀ naan (optional)⠀rice (optional).

Instructions: In a medium sized pot heat olive oil over medium heat. add in onions and saute until translucent. add in garlic and ginger and continue sautéing until fragrant, about 1-2 minutes. add in curry powder, cinnamon, cumin and diced tomatoes and stir until combined with the onion mixture. Slowly stir in coconut milk and bring to a simmer. allow to simmer for 5 minutes, stirring often. using an immersion blender, blend the base of the curry until smooth. alternatively, remove from heat and transfer to a blender, blending until smooth. bring the soup back to a low simmer and add in cauliflower. simmer cauliflower until fork tender, about 20 minutes. Serve over rice with with fresh cilantro and warm naan. enjoy.⠀⠀
