So what does Indian cuisine look like? Depends on where we’re looking on the map. Similar to how we have regional dishes in the states (e.g. New England chowder, New York pizza vs. Chicago pizza, etc.), you will find that different regions in India have developed their own dishes and ways to prepare them. One dish is kadhi, a sweet and savory spiced yogurt dish. Kadhi is popular in several cuisines in the northern and western parts of India, though variations of this dish are also common in South Indian cuisine (e.g. pulicheri). This VEGAN Mango Kadhi is a plant-based take on a type of kadhi you would most likely find on the west coast of India (in Gujarat). It is sweet, a little spicy, and perfect for the summer! 🌱 Chili Tofu Katsu Bowl Ingredients (serves 2) 1 Cup Purple Cabbage (finely sliced) 1 Cucumber (sliced) 4 Radish (sliced paper thin) ½ Cup Basmati Rice 3 Tbsp Tamari 1 ½ Tbsp Rice Vinegar 1 Tsp Sesame Oil 1 Tsp Ginger (minced) For the katsu 300g Firm Tofu ½ Cup Soy Milk ¾ Cup Panko Breadcrumbs ¼ Cup Corn Flour 1 Tbsp Wholegrain Mustard Seeds 1 Tbsp Nutritional Yeast 1 Tsp Garlic Powder ½ Tsp Chili Powder ½ Lime (optional garnish) 📝 Directions 1. Press the tofu by wrapping it in a hand towel and place it between two chopping boards and sit something (2kg) in weight on the top chopping board. Let sit for 30 minutes. 2. Pre heat fan forced oven to 185’c. 3. Cook the rice and set aside. 4. In a large mixing bowl make the wet mixture by combining the plant milk, corn flour and mustard seeds. 5. In another large mixing bowl make the crumb mixture by combining the breadcrumbs, nutritional yeast, garlic powder and the chili powder. 6. In a small mixing bowl make the dressing by combining the tamari, vinegar, sesame oil and ginger. 7. Cut the tofu into 4 large slices about 10mm thick. 8. Add the tofu slices individually into the wet mixture and coat well, transfer to the crumb mixture and coat well, transfer to a baking tray lined with baking paper. Transfer the baking tray to the oven and cook for 10 minutes then flip and cook for another 10 minutes or until the coating is crispy and brown and the tofu is cooked. 9. There ain’t muffin better on a weekday night then an oversized choc chunk cookie muffin drizzled in chocolate sauce.🥄🍰 INGREDIENTS:⠀ ▪︎50 of self-raising flour⠀ ▪︎2 tbs protein pb cheesecake⠀ ▪︎2 TBS almond butter powder ⠀ ▪︎1.5 TBS Natvia sugar⠀ ▪︎6-8 TBS almond milk⠀ ▪︎1 tsp shroom brew (optional)⠀ ⠀ METHOD:⠀ ⠀ 1. Preheat your oven to 180•c and grease your oven proof ramekin with oil. ⠀ 2. Stir flour, protein, pinch of salt, and natvia together until combined. Followed by liquid and adjust the milk for a thick cake batter consistency.⠀ ⠀ 3. Transfer your batter to your ramekin, top with dark chocolate and bake for 20-25 mins or until golden and cooked through.⠀ ⠀ 4. Allow to cool for 15-20 minutes and carefully remove the cake from your ramekin and onto your plate. Top with homemade chocolate sauce ( mixing cocao powder, plant milk, peanut butter and maple syrup). Toasted Vegan Cheese & Mushroom Melts With Caramelised Onions And Jam Recipe

INGREDIENTS 8 slices of sourdough or gluten-free bread, buttered with vegan buttery spread or brushed with olive oil 1 portion of Balsamic Caramelised Onions 1 portion of Sautéed Mushrooms Around 180 ml (2/3 cup) Vegan Cheese Around 4 tbsp of berry jam (1 tbsp per sandwich)

DIRECTIONS Toast the buttered bread slices in a pan. Spread the bottom slices with berry jam and top each bottom slice with 1/4 of the mushrooms, 1/4 of the onions and around 3 tablespoons of the Melty Vegan Cheese. Place the top slice of toasted bread onto each sandwich and serve immediately

Tofu Tikka Masala Recipe

Spiced just right and bursting with flavor, plus this comes together in around 30ish minutes! What more could ya want from a meal?
DO IT: . CURRY PASTE 1 medium yellow onion, quartered 1 shallot, halved 5 large cloves fresh garlic 2- 1inch pieces of fresh ginger 2 tbsp garam masala 2 tsp ground turmeric 2 tsp salt 1 tsp crushed red pepper 1 lemon zest & juice.

TOFU 1 tbsp coconut oil 2 cups sliced cremini mushrooms 1-15ox can of full fat coconut milk or cream 20 oz extra firm tofu, cubed (from two bricks) 1-6oz can tomato paste 1/2 cup vegan plain Greek yogurt 1/4 cup chopped basil, cilantro or green onion 3 cups cooked rice.


NOTES: To make the curry paste combine the onion, shallot, garlic, ginger, Garam masala, turmeric, salt, red pepper, lemon zest and juice in a blender. Blend until thick paste forms. To make the tofu & shrooms, in a large wide brim skillet, heat coconut oil over medium-high, once hot, add in the mushrooms.

Cook for 3 mins, toss & cook another 3 mins. Next add in 1/4-1/2 cup curry paste, (more if you want stronger flavor), coconut milk, tomato paste & mix well to combine. Then add in the tofu, bring to a boil, cover & lower to a simmer. Let cook for 15-20 minutes, stirring occasionally.

Then remove from the heat and stir in the yogurt. Taste and adjust any seasoning or add more curry paste if desired. Top with basil, cilantro or green onion. Serve with cooked rice & mixed greens on the side of desired.
