Potatoes are such an underrated vegetable. Granted they’re not bright and vividly colored as some of the other vegetables but they more than make up for it in being super versatile. They’ve been especially handy during the lockdown, since they keep for long and can be used any which way. . In the picture is aloo poori, aloo meaning potato which refers to the tangy, spicy potato curry and poori is the puffed flat bread, which can also be had by itself.
